This is the perfect cold soup on a hot summer day. Juicy tomatoes blended with peppers and cucumber make for a very refreshing starter.

It is so easy to make (takes only 5 min) and it is super healthy!

Add a few toppings to intensify the flavour and make it looks as pretty as it tastes!
I quite like to add some pan fried chorizo and a few more fresh bred crumbs.
A little bit  of crumbled goats cheese and basil is really nice too.

This is actually my uncles recipe who's been perfecting it over the years and it is by far the best I have had...ok I'm bias but it is seriously delicious.

You will need:


3 large ripe tomatoes (beefsteak are my favourites, or use 5 smaller ones like the ox heart variety)
1 red pepper
1 green pepper
1/2 cucumber
1 sweet onion (yellow ones)
1 garlic clove
2 tbsp red wine vinegar
3 tbsp olive oil
3 tbsp breadcrums
Salt and pepper



Preparation:


1. Blend everything together in a mixer. season to taste

2. Chill in the fridge for 30 min. Et voila!
