I usually make the first batch of this dip around april/may time and it definitely signals the start of the sunny season. The taste of fresh peas with that amazing bright green colour and a zing of lemon in the background definitely puts a bit of sunshine in my belly.
It is also a very quick and simple recipe, so perfect for russle up something healthy on busy weekdays.
Spread in on bread or crakers, dip your carrot sticks in it or blob it into a big salad, it will be gone before you know it!
The quantities below make enough for about 4 people.

-60g of feta cheese
-1 clove of garlic
-6 cherry tomoatoes
-11/2 tbsp of virgin olive oil
-juice of 1/2 lemon
-juice of 1/2 lemon
-5 mint leaves
-salt and pepper
Preparation:
1. If you are using frozen peas, or fresh peas, cook in boiling water until ready (about 4 mins for frozen peas). Drain and leave to cool adn dry.
2. Mix all the ingredient in a food processor and whizz untill you are happy with the consistency. I like mine a little chunky but if you like it smooth then blitz for a little longer.
If you want to add a bit of crunchiness, you can top this dip with some pickled veg (again super quick and easy recipe)
And that's it, all done! Get your veggies, tortillas chips or whaterver takes your fancy and dip!
